Cranberry Nut Bread
5  cups unbleached flour
3 3/4 tsp. baking powder
1 1/2 tsp. baking soda
2  tsp. salt
2 1/2 cups sugar
2/3 cup soft shortening
3 eggs
2 cups orange juice
1 tbsp. grated orange rind
3 1/2 cups cranberries
2 1/2 cups ground walnuts 
2 1/2 tsp. cinnamon

  1. Combine dry ingredients in a mixing bowl and set aside.
  2. Chop/grind nuts in blender and set aside.
  3. Cream sugar and shortening. Add the eggs and orange juice and put in     the orange rind.
  4. Chop cranberries.  Use blender and some of the orange juice as liquid for this process. 
  5. Pre-heat oven now, to 350°.  Grease loaf pans.
  6. Mix dry and wet ingredients with a wooden spoon only enough to wet it  all well.  Fold in cranberries and walnuts.  Minimal mixing is best for lightness of texture.
  7. Put into loaf pans, about 3/4  full. 
  8. garnish pans with a few whole berries pushed into dough a bit and sprinkle sugar over them.
  Bake 50 to 60 minutes at 350 °   Makes 2 large or 3 small loaves.

 COMMENTS: Serve at Thanksgiving, of course.  Can be a regular in the winter and tastes great slightly warm, with butter or cream cheese.  The cinnamon gives it a nice extra touch.
